This Quiet Rebels release is Simon’s pick. Simon is a beer fanatic. He enjoys anything from a light pale ale to a deep heavy stout, especially if it’s been aged in a whisky barrel. So for his release NC’Nean partnered with Scottish brewing legends Innis & Gunn to curate a buttery, chocolatey stout cask whisky with a hint of baking spices.
The whisky in this bottle was initially aged in shaved, toasted and re-charred red wine casks, before being finished in 100% stout casks from our friends at Innis & Gunn. In a great twist too, those Innis and Gunn stout barrels also originally held Nc’nean! A delicious full circle. This cask exploration felt particularly apt for Simon’s dream bottling, with warehouse and cask stewardship being his favourite part of the job.
